Southwestern Potato Salad and Deviled EggsPosted: March 26, 2012
DT and I are enjoying a three-day weekend, weeee!
It’s been delightful – the sun was shining for the weekend proper, today it’s cool and dreary out. So wonderful to not wake up to an alarm this morning!
Yesterday we cooked up a feast. DT made his Grandma Roberta’s deviled eggs and I made a southwestern potato salad a la Bobby Flay.
The stove was busy!
Another little something….we enjoyed Mimosas while we cooked. 😉
DT’s eggs hard boiled pretty speedily – aren’t they cute and shiny?
Doesn’t this just make you happy? It’s like they’re smiling.
DT hollowed out the egg whites and put the yolks in a bowl to make the filling by adding mayo, mustard, and lemon juice.
Look – aren’t they beautiful?
(Paprika was sprinkled on top.)
Oh-so-yummy, and almost as tasty as Grandma Roberta’s. 🙂
Now, to the potato salad.
I more than doubled the recipe – we had a five pound bag of potatoes that needed to be used, so I figured I’d just boil them all up.
I made a few modifications to the recipe….I was stupid and forgot a red onion when we bought everything else and the kitchen sink at the grocery store Saturday. We didn’t have cayenne pepper so I used Burman’s hot sauce instead. I substituted one of the cups of mayo with Miracle Whip for that extra tang. I also decided to forgo the tomato.
The potatoes were peeled, chopped, and added to the bowl with the green onions and jalapenos.
Then came the mayo, Miracle Whip, chili powder, hot sauce, and black pepper:
Everything was folded carefully together to keep the potatoes intact….and now we have a vat of potato salad.
This recipe has all the richness and creaminess of regular potato salad, but with that extra zippy kick from the jalapenos, chili powder, and hot sauce. DEElish!
